Pork: The Other White Meat

Pork isn't on the HCG list, but I added the pork roasts that are found at Costco (98% fat free and only 100 cal for 4oz serving!). They are so delicious and shred nicely when cooked in a Crock Pot. They come in a package of three individually wrapped roasts.

Kalua Pork
1 pork roast
1 T liquid smoke
1 T sea salt
1 C water
Place the roast in a Crock Pot. Mix the water, liquid smoke, and salt together. Pour over top of the roast. Slow cook for 8-10 hours on low or 5-6 hours on high. Shred and serve. (4 oz of pork is about 1/2 C).
This is also a great base for BBQ pulled pork (non HCG). Just add your favorite BBQ sauce to it!
Greek Pork Roast w/ Cucumber Yogurt Sauce
1 pork roast
2-4 garlic cloves
1 T oregano
1 T dill
salt and pepper
1 C water
Place roast in a Crock Pot. Rub seasonings into roast. Place the water at the base of the Crock Pot (try not to wash off the seasonings). Slow cook for 8-10 hours on low or 5-6 hours on high. Shred and serve with Cucumber Yogurt Sauce.
Cucumber Yogurt Sauce
1 small onion
2 cloves garlic
1 tsp cumin
1/4 tsp Cayenne pepper
2 T lemon juice
3/4 tsp salt
1 1/2 C fat- free plain yogurt
Place all ingredients in a blender and blend until smooth. Refrigerate for several hours. (Make it at the same time as you put your roast in the Crock Pot).
For HCG, a 1/2 C serving of Yogurt Sauce takes the place of your fruit serving.
Serve with 1 cucumber and 1 tomato sliced.
For weight management, eat in a pita bread.
Pork Roast with Mushrooms and Rot Kohl
1 pork roast
1 C water
Rosemary
Garlic
Thyme
1 C mushrooms, sliced per serving
1/2 C Rot Kohl (red cabbage) per serving
1/2 C natural applesauce
Place roast in a Crock Pot and rub the seasonings into it. Pour the water on the base of the pan. Cook on low 8-10 hours or on high for 5-6 hours. Shred. Saute mushrooms (no oil) and add to the roast. Serve with Rot Kohl and applesauce.
Sweet Pork
1 pork roast
1 can diet caffeine-free cola
1 cup salsa
Stevia (opt.)
This mock "Cafe Rio" recipe is not my own, but I've adapted it to work with an HCG diet. Combine all ingredients in a Crock Pot and cook on low 8-10 hours or 5-6 hours on high. Shred and serve over a bed of lettuce.
Normally this recipe has 1/2 C brown sugar in it, but I omitted it. If it needs a little more sweet, add some Stevia to taste.

  1. This was SO YUMMY! I had to eat each piece really slowly so I could saver the taste! Best thing I've eaten on HCG by FAR! Thanks again Kenice! :)
